Dalam era keberlanjutan energi, inovasi terus berkembang untuk menjadikan berbagai industri lebih ramah lingkungan. Sudah banyak jenis industri yang kini mulai beralih ke penggunaan energi bersih dalam sistem operasional mereka. Industri kopi merupakan salah satu industri yang mulai mengembangkan pemanfaatan energi panas bumi dalam proses pengolahan biji kopi. Di Indonesia, potensi tersebut kini menjadi kenyataan melalui Geothermal Coffee Process (GCP), yang diperkenalkan dan diinisiasi oleh PT Pertamina Geothermal Energy (PGE) di wilayah Kamojang, Jawa Barat.
Moelyono Soesilo, Ketua Bidang Kopi Specialty dan Industri di Asosiasi Eksportir dan Industri Kopi Indonesia (AEIKI), dengan antusias menyambut inovasi pengolahan kopi menggunakan panas bumi. Menurutnya, terdapat peluang besar bagi Geothermal Coffee Process (GCP) untuk meningkatkan efisiensi petani dan produksi kopi di dalam negeri.
Moelyono berharap melalui penerapan GCP, peningkatan produktivitas dapat tercapai. Sebagaimana umumnya, kawasan geothermal sering berlokasi di dataran tinggi, yang juga menjadi habitat bagi kopi jenis arabika. Ia mengungkapkan bahwa produksi kopi arabika di Indonesia telah mengalami stagnansi selama 30 tahun terakhir, sehingga ia melihat inovasi terbaru ini sebagai pendorong potensial untuk perubahan positif dalam industri kopi.
Mampu Menekan Biaya Produksi dengan Panas Bumi
Pemanfaatan energi panas bumi menghasilkan perbedaan signifikan dalam durasi pemrosesan selama tahap fermentasi dan pengeringan. Tanpa menggunakan panas bumi, pengeringan setelah pencucian menyeluruh memerlukan waktu 7–10 hari, proses honey memerlukan rentang waktu 14–30 hari, dan pemrosesan alami memakan waktu 42–53 hari. Dengan adanya panas bumi, waktu pemrosesan untuk setiap varietas kopi menjadi lebih efisien, yaitu 2–4 hari untuk pencucian penuh, 4–7 hari untuk pemrosesan honey, dan 7–10 hari untuk pemrosesan alami.
Dilansir dari laman thinkgeoenergy.com, dari segi ekonomi, pendapatan yang diantisipasi dari kelompok petani GCP diperkirakan mencapai sekitar Rp165 juta (setara dengan 10,659 USD) per tahun, dengan rata-rata pendapatan pengelolaan sekitar Rp24 juta per tahun dan penghematan biaya operasional sekitar Rp55,2 juta per tahun.

Meningkatkan Kualitas Biji Kopi
Proses pengolahan kopi akan memengaruhi hasil akhir yang diseduh. Sehingga proses pengolahan termasuk faktor yang tidak boleh disepelekan dalam industri ini. Ada beberapa cara proses pengeringan biji kopi yang umum digunakan di Indonesia, yaitu sebagai berikut.
Proses Semi-Washed
Proses semi-washed melibatkan dua tahap pengeringan. Setelah pemetikan, kulit luar buah kopi dihilangkan menggunakan depulper dan dikeringkan sebentar. Berbeda dengan kelembapan kopi yang biasanya disisakan hingga 11-12% selama proses pengeringan, pada proses semi-washed, kelembaban kopi dibiarkan mencapai 30-35% sebelum kemudian dikupas lagi hingga mencapai bentuk biji yang seutuhnya.
Proses Kering
Setelah dipanen, buah kopi ditebarkan untuk proses pengeringan di bawah sinar matahari. Agar pengeringan merata dan mencegah pertumbuhan jamur, buah kopi perlu dibalik secara berkala. Dalam metode pengolahan proses kering, buah kopi tetap utuh dengan semua lapisan buahnya, dan fermentasi alami terjadi karena kulit luar buah mengelupas sendiri.
Proses Basah
Setelah pemanenan, buah kopi dipilah dengan merendamnya dalam air, membuang yang muncul di permukaan, sementara yang tenggelam dianggap matang untuk tahap selanjutnya. Buah kopi terbaik akan dipisahkan menggunakan mesin depulper untuk mengeliminasi kulit dan daging buah kopi. Biji kopi yang telah terpisah dari kulitnya kemudian dibersihkan dengan merendamnya dalam air khusus, memungkinkan sisa-sisa kulit untuk terlepas melalui proses fermentasi.
Dikutip dari laman medcom.id, sejumlah warga menyatakan bahwa sebelumnya mereka merasa tidak puas karena kualitas biji kopi yang dijemur di bawah sinar matahari menurun. Hal ini disebabkan oleh kebiasaan mereka menjemur kopi di halaman rumah yang langsung berbatasan dengan jalan raya. Asap dari kendaraan dapat terhisap oleh biji kopi sehingga menurunkan kualitasnya.
“Hancur memang tidak, tetapi aroma kopi jadi kurang mantap. Anda tahu tentu maksudnya. Sehari-hari masyarakat biasa menggunakan kopi untuk menghilangkan bau bukan,” kisah salah seorang petani seperti yang diwartakan dalam Medcom.id.
Waktu pengeringan yang tidak higienis dan efisien ini dapat berdampak pada kualitas biji kopi. Selain itu, biji kopi yang mengalami pengeringan di luar ruangan berisiko terkontaminasi oleh udara, dan memerlukan waktu lebih lama untuk pengeringan karena tergantung pada kondisi cuaca. Dengan begitu, metode GCP akan menghasilkan biji kopi yang lebih higienis.

Mesin pengering GCP dianggap ramah lingkungan karena sumber energinya berasal dari panas bumi, yang dapat diandalkan sebagai sumber energi bersih dan tidak merusak alam. Mesin pengering kopi yang saat ini digunakan dapat dijelaskan secara sederhana. Kopi yang sudah dikupas kulitnya ditempatkan dalam tabung besar pada mesin pengering. Tabung tersebut kemudian dialiri uap panas yang berasal dari sumber panas bumi. Panas dari panas bumi tersebut dialirkan melalui pipa yang berasal dari wilayah PLTP sekitar. Dalam waktu singkat, kopi yang dimasukkan ke dalam mesin akan mengering secara langsung dan siap untuk proses penumbukan.
Melalui pemanfaatan energi panas bumi, GCP memberikan kontribusi positif dalam mengatasi perubahan iklim. Penggunaan energi bersih dan ramah lingkungan membantu mengurangi emisi gas rumah kaca, menciptakan model bisnis yang sesuai dengan kebutuhan lingkungan saat ini. Potensi pengurangan emisi GCP mencapai 4 ton CO2 setiap tahun dan potensi pengurangan limbah organik mencapai 419,2 kilogram per tahun. Dengan hal ini, jadi Makin Tahu Indonesia dan dapat mendukung perubahan energi bersih di segala sektor industri.
